Protein No Bake Cheesecake

Ingredients:

  • ½ cup almond milk (or milk of choice)
  • 1 tablespoon grass-fed gelatin
  • ½ cup boiling water
  • 2 cups good quality organic cottage cheese
  • ⅓ cup Swerve or Lakanto Confectioners Sweetener
  • 1 teaspoon vanilla extract
  • 1-2 scoops collagen or bone broth protein powder (optional)*
  • ⅓ cup sugar-free chocolate chips (optional)

Instructions:

  1. Sprinkle the gelatin in the milk and let sit for 5 minutes. Pour boiling water over the milk and stir.
  2. Add cottage cheese, milk/water mixture, sweetener, vanilla extract, and protein powder (if using) into a blender and process until smooth. During this step, you can add other flavors like cacao powder, peanut butter, or chocolate chips.
  3. Pour into 4 ramekins or one mini springform pan and chill for 3 hours or until set.
  4. Melt the chocolate chips, drizzle or spread across the top, and refrigerate until it becomes a “crackle top.”
  5. Make sure to use a protein powder that you love because the amount you use will influence the taste. It works great with or without the added protein powder.
