Protein No Bake Cheesecake
Ingredients:
- ½ cup almond milk (or milk of choice)
- 1 tablespoon grass-fed gelatin
- ½ cup boiling water
- 2 cups good quality organic cottage cheese
- ⅓ cup Swerve or Lakanto Confectioners Sweetener
- 1 teaspoon vanilla extract
- 1-2 scoops collagen or bone broth protein powder (optional)*
- ⅓ cup sugar-free chocolate chips (optional)
Instructions:
- Sprinkle the gelatin in the milk and let sit for 5 minutes. Pour boiling water over the milk and stir.
- Add cottage cheese, milk/water mixture, sweetener, vanilla extract, and protein powder (if using) into a blender and process until smooth. During this step, you can add other flavors like cacao powder, peanut butter, or chocolate chips.
- Pour into 4 ramekins or one mini springform pan and chill for 3 hours or until set.
